Bacon Potatoes (Slaninové Zemiaky)
Ingredients: potatoes, bacon, paprika, caraway, salt, pepper
Prep Time: 80 minutes
I had some left-over bacon from preparing the St. Nicholas Day kapustnica, so I decided to make bacon potatoes, the way my mom makes them. Start by peeling and washing several large Russet potatoes. Also preheat the oven to 400F.
Then cut each potato (zemiak) in half and cut out a wedge from the round part. Place half a slice of bacon (slanina) in each slot.
Season with paprika, caraway (rasca), salt (soľ) and black pepper (čierne korenie). Bake at 400F for about an hour, or until the potatoes are soft on the inside and crunchy on the outside.
Serve with milk or kefir. These potatoes make for a tasty light dinner, following a good Slovak soup.
This is the same recipe which I use only I make it looking little bit prettier. It is a very good recipe and it tastes very – very good! Everybody who will try will see!
Moja mama kraja neolupane zemiaky na polovice, na kazdu da kusok slaniny (mensi nez Tvoj) a tak ich pecie. Vyborne chuti v zime, s kyslou kapustou.
Ahoj Lidushka – mas pravdu, slaninka by mala byt trosku mensia. Mne sa totiz nechcelo ju velmi krajat tak som ju len tak rukou natrhal a hodil na tie zemiaciky. Inac s kyslou kapustou som ich este nemal, dobry napad! No a tvoja Slovencina je super! Ja som sa sam len pred nedavnom dozvedel ze v Srbsku (teda Vojvodine) je tolko Slovakov. Je to vynikajuce ze sa takto zachovavaju tradicie.

I said that yes, the bacon really ought to be smaller, but I got lazy and instead of cutting the bacon, I just tore out pieces with my hands. I also commented on her another post about her origin in a province of Serbia called Vojvodina. As I myself learned only recently, this region has a large population of Slovak expats.)
I made this tonight. It’s in the oven. Company is coming over. Will be serving it with Slovak stuffed cabbage, carrots, and corn on the cob. Hope we like it.
